Harvest Method Manually in 20 kgs boxes
Fermentation and Maceration Once the grapes from the Chardonnay vines are harvested, they are pressed using what some call the ‘Champagne’ method. This process involves pressing the entire bunches very gently, separating the ‘Cuv?e’ (first juice) and the ‘taille’ (final pressing). The two juices are fermented separately using without SO (Oxidative method) in stainless steel tanks for ten to fifteen days at 16 to 18?C. Some lees are present in the tanks, but there is little battonage type work stirring the lees in this wine.
Aging Afterward part of the juice (10%) is tasted and selected to be aged in French Oak barriques (second to fourth usage) for about six months.

Since 1993, William Fevre, the famous vintner of Chablis in Burgundy, has been producing exceptional wines in his Chilean Estates. He is one of the first and only ones to produce at high altitude in what now is called the new D.O. Maipo Vallley - Andes in Chile. Low temperatures and a mix of coluvial and aluvial soils gives complex, elegant and fresh wines. The vineyards are aged between 10 and 35 years, always looking for higher altitude in our farm of more than 2000 hectares in the Maipo Canyon, between 670 and more than 1000 meters above the sea level.

Espino is a Chilean acacia present in austere and dry terroirs, in altitude. It is also a word play with the last name of the Chilean Partner of Mr. Fevre, Mr. Victor Pino. In spanish the word ES means IS.
